Christmas in Whispering Cove

There is nothing like celebrating Christmas in the quaint fishing village known as Whispering Cove, a place where everyone knows everyone and the granddads are always scheming…and always getting in to trouble. Trouble or not, every few months, these rum drinking granddads set their sights on couples they want to hook up, placing bets on who will get their couples together first and using every trick in the book to make it happen!! After all, there is a case of rum involved!!
This year they’re having all kinds of fun in Silk, Stockings and Serenades! And oh, the trouble the three find themselves in this time around!
Today, Tabby McGrath (nee Taylor) from BOLD, Dani Mitchell (nee Kent) from WICKED, and Lila Carver (nee Sheppard) from SILK are here to share some of their favorite Christmas recipes!
Tabby’s favorite get together recipe is Spinach Dip, and she says it’s easy to whip up in a hurry!
1 pkg of Knorr’s Vegetable Soup
16 oz of sour cream
16 oz of mayo
1 can of water chestnuts (chopped)
4-6 green onions (chopped)
1 pkg of frozen spinach (thawed and drained)
Mix all together. Serve with sliced baguettes or French bread or in a bread bowl.
Doctor Dani is here to prescribe a delicious Peppermint Hot Chocolate.
Over a low heat, melt semisweet chocolate chip morsels into milk and cook until it steamy. Top the hot chocolate with a squirt of whipped cream and drizzle crushed peppermints over the cream. For the adults in the group, add a medicinal dose of Peppermint Schnapps or Dark Crème de Menthe.
Chef Lila’s favorite holiday dessert is pumpkin rum pudding with Rum sauce (a granddad favorite!)
I Tlbs butter
10 cups of challah loaf cut into cubes, about one inch.
2 egg yolk.
2 cups heavy cream
2 cups milk
1 cup pumpkin puree
1 cup brown sugar, I prefer the light.
1 Tlbs pumpkin pie spice
2 tsp vanilla
¼ cup dark rum (that’s what makes it a granddad fav!)
¼ tsp salt
6 large egg yolks
6 tablespoon(s) sugar
1 cup) heavy cream
1 cup) milk
1 tlbs vanilla
1 tlbs dark rum
Make the Bread Pudding: Heat oven to 350°F. Grease a 13x9x2-inch baking dish with butter.
Bake bread cubes in a roasting pan, tossing several times, 15 to 20 minutes or until bread feels dry and slightly firm. Transfer cubes to a large bowl. Turn off oven.
In another bowl, whisk eggs, cream, milk, pumpkin puree, brown sugar, pumpkin-pie spice, vanilla, rum, and salt. Add bread cubes, tossing to coat. Pour mixture into prepared baking dish. Cover; chill overnight.
Heat oven to 350°F. Place baking dish in a roasting pan and pour enough boiling water into roasting pan to come halfway up sides of dish. Bake 50 to 55 minutes or until a knife tests clean. Let cool in pan on a wire rack until warm. Dust with confectioners’ sugar; serve with vanilla-rum custard sauce.
Make Rum Sauce: In a medium bowl, whisk egg yolks and sugar, about 3 minutes.
In a medium saucepan, heat cream and milk over medium heat until bubbles form around the edge. Slowly whisk cream mixture into yolk mixture; pour back into saucepan. Heat over medium-low, stirring constantly, until sauce coats back of a spoon, 3 to 4 minutes or to 170°F. Remove from heat; stir in vanilla and rum. Strain through a fine sieve into a bowl. Serve warm or cold.
